After you unlock another shark, you’ll be able to pick between the new shark and your old shark when you play a stage. Your bite, speed and boost (and size) will all be at level 1 again until you upgrade them and until you level up by eating. Sometimes it will be easier (at first) to get coins using one of your old, maxed out sharks, though, so do that if you need to make a quick buck or two in order to upgrade your shark.
To get back to your newest shark as quickly as possible, though, your best bet is usually to upgrade your shark’s bite two or three times before you do anything else, with the exception of a quick speed upgrade so that you can catch up to new enemies more easily.
Usually you’ll find that after an upgrade, finding a good hot spot to get some food will be a chore because there are more empty spots; however, keep going down, down and down some more until you hit the floor, because there are new sea shells (thus, new missions) and new collectible items for every shark (each one earns you plenty of points and coins). Also, for each shark, there is a treasure chest with a daily reward. Once you find it, remember where it is so that you can go back to it every day for hundreds of coins.
Even if you are having a hard time finding food, though, find just enough to survive, and stretch out your survival time for as long as you absolutely can. Each minute that you stretch out your survival time equals out to more coins that you earn at the end of the round.
