Super Mario Sunshine Unlocking Yoshi Walkthrough:

Yoshi is Mario's lil' dinosaur buddy, but he's still just an egg and Shadow Mario has him. What you need to do is head to Pinna Park and beat the Koopa Turtles in Episode Four. Once they've been beaten, head back to the Delfino Plaza and Shadow Mario will be there with Yoshi's egg!

Get your butt in gear and chase Shadow Mario down, hose him off with the FLUDD and he'll eventually drop the Yoshi egg. Once you get the egg, you need to wake Yoshi up by feeding him bananas from the fruit stand down below. As soon as Yoshi gets a banana, he'll wake up and you'll have the little dino-dude's help for the rest of the game. Just make sure you feed him lots of fruit or he'll get tired and go to sleep again.
