How do you kill chameleos

If you're referring to Monster hunter 2, consider using poison arrows on it with a bow, aiming for the nose where ever possible.
Also consider using sonic/flash/paint bombs, as these allow you to find it if it moves location.
All in all, try to find a bow with a spread option AND a straight targetting option, as this increases both power and chances of finding it.
