How do you defeat sensei on clubpenguin

You must work your way through all the belts, up to black belt. Once you have earned your black belt, talk to Sensei and ask to play against him. You won't be able to beat him the first time, but as you keep playing again and again you will slowly start getting some cards and eventually you will beat him. Good luck!
