The answer is
no. HDMI stands for High-Definition
Multimedia Interface. The audio and video are transmitted in
digital format (1s and 0s). In order to connect headphones (or
anything else), you would need a DAC on one end.
But good news: your TV sports a DAC for sound purposes, and chances
are high that you can connect your 3.5mm minijack into the TV's
output.
Unless you mean the fact that the Xbox360's output
ports are configured
in such a way that makes it
nigh-impossible to connect anything else whilst HDMI is plugged
in! In that case, you can crack the HDMI plug's case open
using a flat-head screwdriver. Keep in mind that this
will expose the cable and connector to excessive
wear&tear and the elements, and it may break much sooner.
(spilling any liquid on a so exposed connector may also mean a
death sentence to your console, too)
