What is the most violet video game out there

It depends on your personal standards.

The "Call of Duty" series is extremely violent in that it depects intense combat of World War II. But the violence is mitigated in that the game depicts historical events and is never gratuitous.

My nod for most gratuitously violent game goes to the Postal series--a guilty pleasure of mine.
