If heat level is lower (2-3), its quite easy but, if the heat level is 4 or more, its quite a tough job. My favourite car is Lamborghini Gallardo, for me its the best car to chase with cops. At heat 4, the cops have powerful cars, they can stop you and try to box you. Use nitros to slip out from cops crowd. If a cop is force head on, go back and in any suitable direction. For best result, never mess with heat level 4-5 cops.
