In Skyrim you can play any way you desires. There are no specific "roles". You get better at fighting with one-handed weapons by actually fighting with them, same goes for different types of magic such as healing, destruction and illusion spells just as you gain block skills if you actively block attacks with a shield and hit enemies with two-handed weapons.
Your armor type levels up as well, the more your hit while wearing Heavy Armor your skill in Heavy Armor goes up (same for Light Armor).
As you level up (you gain a small part of one level every time you skill up abilities such as the types of magic, blocking, weapon skills etc.) you get to choose one out of three resources, these are Magicka, Health and Stamina - Magicka is your resource for casting spells, the more Magicka you have the more spells you can cast before you run out of it. Health is simply how much damage you can take before you die and Stamina is used for hitting people with physical attacks, sprinting and it also manage how much you can carry.

SO.. if you start off playing a two-handed fighter with heavy armor you will gain levels while increasing these skills and you will find that you get most use out of Stamina for harder attacks and Health to stay alive longer in melee combat. But if you at say level 10 decide you want to be a magic user and cast flames upon enemies and use light armor, you can simply "equip" your flames spell to your hand/s and start fighting. Your spells will hit a very low amount and you will run out of magicka really quickly and take much more damage wearing light armor but as your magic and armor skills increase you will be better at it and when you start leveling up you can start choosing magicka increase instead of health or stamina.

The game is very dynamic this way and you can also have different spells on each hand so you can cast fire with your left hand and heal yourself with your right or have fire in one and a sword in the other, this way you will also be leveling up your one handed skill while increasing your magic skills. Same goes with armor, you could have a heavy armor shield in your left hand and frost spells in your right to block incoming attacks and counter attack with your magic.

The optimal way of playing will be to only choose one way of playing and then just use all your level choices between magicka, health and stamina in a way that improves your character the most but you do have somewhere between 50-80 levels and you can still increase your magic skills to 100 even those you dont have as much magicka, you'll just have to wait a bit between casting as many spells for your magicka to recharge.
