Can you make 2 death knights on different realms if you have only 1 level 55

Yes. All that is required for a Death Knight to be available is one level fifty-five (55) character on ANY realm. Once that character is 55, then you can create a Death Knight on as many servers as you wish. One Death Knight per server though.
